Abstract

The fatty acid composition of five species of medicinal herbs has been identified for the first time. In connection with lowering daily average temperatures, the processes of lowering the content of saturated fatty acids and the decrease in the content of unsaturated fatty acids have been registered. The low-temperature adaptation of membrane lipids of the herbs has been found to be species-specific and is probably bound up with the growth in the activity of various desaturases (desaturation-enzymes).
